Malka Beverly Hills opens kosher Israeli restaurant
Chef Eyal Shani’s kosher-certified Malka launches in Beverly Hills with a seasonal menu and a focus on collaborative dining.

Malka opened its Beverly Hills outpost on the ground floor of the boutique SIXTY Hotel on Aug. 27, 2026. A pre-opening event for journalists, influencers and models featured rows of raw vegetables, toasted focaccia topped with steak tartare or smoky eggplant caviar, loud music and a steady flow of mojitos and palomas.
The restaurant is Glatt kosher, operating under strict rabbinic standards, and presents a seasonal menu inspired by vibrant dishes from around the world. Chef Loel Miller, who trained under Shani in Tel Aviv and later oversaw Good People Group’s international expansion, leads the kitchen and emphasizes simplicity, purity and inventive kosher cooking, according to the brand’s official site.
Malka adds a high-end kosher option to Los Angeles’ limited market, reflecting Shani’s belief that “limitations are a blessing” and aiming to serve a broad community of diners who seek both tradition and modern flair.
Kosher culinary concept and menu philosophy
Malka describes the dining experience as a tandem performance between guests, the kitchen and the staff, a concept rooted in Shani’s Tel Aviv origins. The menu is seasonal and draws on fresh vegetables, olive oil, fish, tahini and tomatoes, ingredients that echo the Mediterranean palate while adhering to kosher law.
The restaurant’s Glatt certification is confirmed by certificates for its U.S. locations, assuring diners that every ingredient, tool and production step meets rabbinic standards. The Malka website highlights this status as a core part of its identity.
Chef Loel Miller, a former protégé of Shani, brings the philosophy of “limitations as blessings” to the Beverly Hills kitchen. He works closely with kosher experts to push boundaries, offering inventive dishes that remain accessible to vegans, pescatarians and meat-eaters alike.
Malka also offers prix-fixe dining for groups of nine to sixteen, a format that aligns with Shani’s vision of communal, theatrical meals. Reservations are managed through Resy, with daily release times at 10 a.m., and the wine list features only mevushal kosher wines.

Opening details and broader vision
The pre-opening event showcased the restaurant’s signature style: raw farm-market vegetables, focaccia with steak tartare or eggplant caviar, and a soundtrack of loud music paired with cocktail service. The lively atmosphere set the tone for Malka’s high-energy dining experience.
Shani views kosher as a creative limitation that fuels innovation. He told the Forward that “each culture leads with its limitations, and those limitations are a blessing.” He also noted that roughly 70 percent of Israelis prefer kosher or strictly kosher dining, prompting him to expand beyond the “hipsters in Tel Aviv.”
Malka joins Shani’s portfolio of roughly 70 restaurants worldwide, including locations in Tel Aviv, New York City, Brooklyn and West Palm Beach. The Beverly Hills outpost marks the latest step in bringing modern, kosher Israeli cuisine to a broader U.S. audience.
